Sejak, also known as “sparrow’s tongue” for its small, delicate leaves, is a vibrant green tea crafted from the year's second flush, harvested between late April and early May. Grown on a lush, single-estate farm in the rolling hills of Boseong, this tea captures the lively freshness of spring. Harvesters carefully pluck young, tender leaves, which are hand-processed through steaming, rolling, and roasting techniques. This meticulous process results in a tea that offers a balance of fresh, grassy notes and subtle nutty undertones.

Brewing Instructions:

Metric:

  • Bring filtered water to 75–80°C

  • Add 4 grams of tea to 0.5 liters of water

  • Brew for 1–2 minutes. Adjust time or quantity for preferred strength.

Imperial:

  • Bring filtered water to 167–176°F

  • Add 0.14 ounces of tea to 16 ounces of water

  • Brew for 1–2 minutes. Adjust time or quantity for preferred strength.
